It won't work without the nether roof. You need to kill them in one swipe because the thorns will kill you otherwise.
Someone already made an alternative farm with a water elevator, but Fauna has no tag for it.

Oh, the split is on? Well, since Fauna asked for it, just want to say that you can make a Guardian Farm with a standard water elevator. It needs more materials, but you don't need the Nether roof or calculate the portal coordinates, so it's easier for the brain.
The simple explanation is just to create a 2x2 water elevator in the middle of the scaffolding area to shoot them up & water sources at the side to herd them into the center. The rest are the same.
I can create a detailed written guide but it needs time.
