Most likely Doki is earning more, but in terms of actually keeping it, it could be a toss up. Doki has so much money now from merch, con stuff, and sponsorships that she's now basically doubling her own workload in terms of projects. Meanwhile we don't know what the details of Mint's contracts with Vshojo might be for that merch line, but in a month or two when youtube actually pays her she'll probably have more liquid cash on hand than Doki who seems to reinvest it almost immediately if not physically restrained.
