I mean, these feats are visually indicated on-screen. Obviously they're not going to show the universe exploding since everyone would be dead but these aren't just "characters saying how powerful they are".

I believe this is explained by Goku letting his guard down (because even their durability feats comes from Ki control apparently). There's an instance in DBZ that shows Goku getting hurt by a rock thrown by Krillin because he was sleeping and wasn't prepared for it.

Nope. Dragon Ball scaling dictates that if you're strong enough, you can blatantly ignores all kinds of hax and pretty much nothing will work on you. Goku literally moves through erased time because he's just that strong and logic has nothing on him. Vegeta shoves off a God of Destruction's "Hakai" blast that erases anything from existence because he's just too strong to be erased.
