There's actually lots of kinds of fish roe each with their own distinctive flavors. In terms of non-sturgeon roe, there's Masago, Tobiko, Tarako and Ikura in japan which range from subtle saltiness to rich spiciness and brininess. Caviar also doesn't have to refer to a single species of sturgeon. Beluga caviar, the most expensive variant, is obviously from Beluga sturgeon from Russia while Hackleback caviar, which is more affordable, is made from Hackleback sturgeon that are native to North America.
