>How is having a bunch of models a bad thing?
The problem here is twofold.
First she's not just changing the outfit, she's changing the whole model. So she's basically a new vtuber every 3 months. And second she rarely goes back to older models she already replaced.

Let's compare her to a normal vtuber
Normal vtuber: can collect multiple outfits, might have 2,3,4 or even more outfits. The outfits can match different themes or styles. She can freely change to any of those outfits she wants.
The body and face of the character don't change, it's still the same vtuber just changing the outfit. There's consistency in her identity while having variety in her options.

Ironmouse: replaces one model with another, might have several models she can use but will most likely stick to 1 only. Most of her models are restricted to the same general theme or style, they're all pink demon/angel girls. She won't really change around them so she effectively only has 1 model at any given time. Her whole body and face change every time, meaning there's no consistency to her character so it's harder to have a clear idea of what she is like. This makes fanart harder to draw and the vtuber is less recognizable, it also doesn't let people get accustomed to any of her designs and makes her feel less real because there's a weaker connection to her model.

Pic related is the first Ironmouse I knew. All the others feel like strangers to me.
