she might of been vegan at one point, and she's lactose sensitive so that explains the nutmilks and vegan pizza, dislike of cheese. But shes said she is afraid to cook meat because she tends to let it sit in the fridge for a few days out of laziness and doesn't know if it's safe to eat. So she eats things that can't "go bad" like vegan lab "meat".
She really needs to find a local chef or nutritionist and set up a meal prep and delivery service. A a local pro chef will cook the meals, pack em in containers and leave them on her doorstep. All shed have to do is pop em in the microwave or oven and boom, a balanced, hot meal with real food.
