Looks solid to my knowledge, sans for two parts:
- There is no clear way to selectively add Glycogen Phosphorylase at this era, you'd need to isolate it from organic tissue or use a genetically modified vector organism with a strong promoter to overexpress the gene coding the enzyme.
- Speaking of enzymes, there might be a major problem with using untreated liver. The liver, outside of glycogen, contains a lot of metabolic enzymes, including alcohol dehydrogenase, which would actively convert ethyl alcohol into acetaldehyde. You'd need to denature the liver enzymes somehow, the easiest way to do so is heat treatment.

Also, assuming you're the /wg/ rep, I haven't forgotten about replying, I'm just in between some major things and thus the story planning was put on the backburner from my side. That being said, if you want to flesh things out or bounce off ideas, feel free to do so, I just won't actively write a lot for a while.

Nobody does this, eating raw olive fruit that is. Unless, say, you went on a trip to Tuscany and visited an oil farm of a family who was growing olives for generations, to check if they really are as bitter as they say.
Also, yeah, burgers get a lot of low-quality olives. Italian ones are probably the best I've eaten, but you can find a lot of good and affordable olives from Greece/Morocco/Algeria in Europe.
