The sort of person to randomly stumble upon your stream among the trillions of other vtubers streaming it is also the sort of person to not stick around. They might watch for three minutes then never come back.

TOP TIER GAMES TO PLAY TO GROW AN AUDIENCE:
1)Older games that were widely and fanatically popular during the time your target audience was between the ages of 13 and 18 (Portal, Half-Life 2, etc.). You want those pangs of nostalgia. Use the psychology of reaction channels. Make people want to see how you feel about something a large number of them are liable to have played and have positive feelings for. Bonus points if you've never played it.

2) Games people universally acknowledge as foundational. Things like Thief, Deus Ex, FFVI / IX, that people have always heard are exceptional but it's somewhat difficult to find a modern perspective on. Always pay attention to video game news and pounce when public discourse brings one of these games back up. The VI re-release a few months ago would have been an amazing time to play through it and bring in new viewers.

3) Games you personally adore that are obscure but not TOO obscure. Games you can give background information and tell stories about for hours. It's not directly VTuber-related, but the Super Best Friends channel launched and succeeded very respectfully off the back of playing games in this and the prior (often both) categories during the early years. If you can't be a blind observer going in with blind and experienced viewers alike, be an extremely well-read entertainer showing your blind viewers around. Telling them all the little tricks and anecdotes about the game's development.
