"Easy to learn" characters can be useful, but imo, it's better to pick whoever you think is fun. Better to mash buttons on a character you think is cool than obsess over "learning fundamentals" in a way that's boring. Fundamentals come easiest when you find things you want to use them to achieve.

I'm practically brand new to Street Fighter which is nothing like the anime games I'm used to, but I still went with Manon because "lol her grab is fun" and "tall woman uoh mommy" and haven't regretted it.
