It's not all black and whites, there is plenty of nuances between full-on kayfabe and open-book literally-myself.
For strong kafaybe + lore/character building and all even outside of stream, you get some like Baetani, Lilyhops, even Corpse or Kongou to an extent. Outside wvt, Luna is a pretty textbook example of it too.

Some are not full-on kayfabe with lore, but still are dedicated to a character focused on entertainment, like Kitanya, Meat, even Koragi or Arypie, they rarely get too personal or trauma vent and focus as much as possible on keeping the content entertaining, for viewers, not themselves. One of the points of vtubing was this artificial world free of the real world bullshit you could escape to and enjoy, those mostly keeps this aspect. A world free from usual life annoyances that come with anything not fictional.

Some in the middle include more of themselves but also have some well defined character/element to play with like Picky, Alice Sawyer, Yoryoyo, Shimada to an extent... even Pippa and many others. Perhaps Niji's noraneko would fit this.

Then you have the other end of the spectrum with people like Mocca who even removed the vtuber mention from his profile for a while, openly being themselves without filter even if that means logically putting off some people.
Without being so extreme, ones like Leaflit, Bunzel, Newt or many others are really streamers using an anime avatar either for privacy, convenience or just fun, but don't really do any performance to speak of. Even some holo girls are close to this, matsuri for example. Of course it's ok and it can still be interesting for other reasons of course like regular streamers, but it's different than vtubing in the initial sense and the reason it came to be.
