I think nearly all twitch streamers that have a discord use automated sub roles which requires linking your discord and twitch. You don't have to have it linked to be in the discord at all, it only locks sub channels, but you also cannot just ask a mod to give you the role making up some story about linking not working or not wanting to link them, the sub role literally can't be assigned unless they were to make a special role just for you that they'd have to constantly monitor to see if you're still subbed to know to take it off you or not.
The voice channel Naiyo is hanging out in right now is in a sub only part of her discord so you'd need to link to join that though.
