I'm not happy with my first encode though. I just assumed that it was 3:2 pulldown, but the result looks choppy, and the ts -looks- like pure interlaced material. Hopefully you guys don't finish too quickly. I have to keep at this until it looks perfect

Absolutely. In the US, some cable/satellite providers don't even encode with mpeg2 anymore, and 1080p broadcasts are actually a thing if you're one of the lucky few with the right provider. I don't know what its like in Japan, but over here what you get can vary wildly.

By the way, I'm still working on the encode. Turns out my IVTC filters don't like avxsynth, and avspmod doesn't like to work when I need it to, so I'm gonna have to figure out how to squeeze the most performance out of a Windows VM before I get anywhere with this.

I'm not sure what side of the argument this fuels, but the 15GB .ts of the Paris Special looks like shit. This IS normal though. Most broadcast TV is compressed to hell and back BEFORE its captured.

I decided not to deal with the video game segments separately since I wanna get this thing running while I'm at school. Windows Server 2012 R2 actually. Only thing I could get for free without pirating. Gotta use this for work too though.
