What are the best versions of Super Mario Bros. 1, 2, and 3 to play from start to finish?

SMB1 and Lost Levels = NES and Famicom Disk System respectively.
SMB2 = Personal preference, I kinda like SNES
SMB3 = I like both versions

Nes SMB All-Stars romhack is pretty cool, adds All-Stars style world saving and combines all roms into one.

The original versions first, this is a Golden /vr/ rule OP.
Then All Stars when you feel like replaying them, it's a cool buffed up 16bit remake collection and includes japanese SMB2 aka Lost Levels.
GBA versions have some extra stuff too, worth checking out too.

Not a problem, do as you wish, All Stars is still valid. But the originals have their own charm. IMO All Stars is even more enjoyable if you go into it already familiar with the originals, to appreciate the 16bit upgrade in graphics. And also so you can share how people back in the day actually enjoyed those games. To have a more genuine retro experience, if you care about that.

SMB1. NES.
SMB2. Throw it in the trash and play SMB2J on the Famicom Disk System. (The only acceptable time to play the All-Stars Lost Levels version is if you are speed running the 100% category, since you don't need to beat the game 8 times to do the final stages on the remake.)
SMB3. NES.

SMB2 All-Stars isn't actually too bad though, I just prefer the look of the NES one a little more.
I also prefer the look of NES SMB3 but that's a much bigger difference, so I say the NES version is much better.
SMB1 actually has gameplay differences. NES version doesn't kill your momentum when breaking a block. Therefore, NES is objectively better.

1 is simple to finish in one sitting and original graphics are too popular to miss out on. I also don't like the changes on the remakes
2 benefits from being able to save and level select so you can really enjoy everything, and personally I prefer the fancier graphics and extra challenges
3 I could go either way, the save situation is not ideal in any of them, and the new graphics don't impress me, but they weren't totally annoying changes like 1 either.

SMB2 - I don't recognize any non-DDP version of this
SMB3 - Famicom, however voiceless color-corrected GBA ROM w/full World-e is worth seeking just to try out the proto-NSMB levels

Also to add onto this, Lost Levels is the vastly superior SMB2, and that one is also best on All-Stars.

SMB2 USA is really mediocre but still try it out and see if you like it

Also, there is a romhack to fix the physics bug in All-Stars which is basically a necessity:

It doesn't matter. I've played them on NES, SNES, PC, Wii, and Switch. The differences are trivial. They're all fine.

SMB1/2 -> SMB Deluxe on GBC, you get the best version of both SMB1/2, with a world map and cutscenes and extra content.
SMB3 -> NSO or wii U version of SMA4 that includes the bonus levels best version of SMB3
SMB2USA-> BS SMB USA, it includes extra content like voices, cutscenes between levels and whatnot.

TLL is so close, but like All-Stars, it losessome of its unique graphical identity, plus Worlds 9&A-D are gone AND the enemy bounce physics nerfed to OG SMB's which makes some gaps nigh impossible (and I think they got rid of gameplay elements like wind too). You can tell TLL was a total afterthought in Deluxe.

3 is ok on SNES, but better on NES. 2 on SNES is an abomination and anyone who prefers that version isn't old enough to have played it on NES

Way to be exaggerated and hyperbolic.
I played SMB2 on NES first, and when I played All Stars I actually thought that was the best looking of the remakes. I think it's because the jungle-ish background popped out neatly.
