There's Fatal Fury 2/FF2 Special, and Art of Fighting is there too. FF2/Special are said by some to be the best home-console ports of FF2. Both require the arcade card, but if you're emulating that doesn't matter.

There's a lot of RPG/ADV, but if you don't know Japanese your options will be limited to a few games like Ys 1&2 and fan-translations.

new zealand story and strider are flawed versions that are still worth checking out for certain reasons. ghouls n ghosts is supergrafx only and is much harder than the genesis version

unfortunately, there isnt a big metroid equivalent on the system (though there are games like sonson ii and dragon trap that are kinda along the lines).
the closest you will get is eternal city, which is closer in gameplay to thexder. its pretty obscure but the included manual has a map of the entire game

for fighting games, FFS is a must, and so is the kabuki clash prequel. konami's martial champion is kinda fun but not a great port. SFIICE is impressive but doesnt offer anything over the other versions
