I have the Mad Catz Official Street Fighter IV Arcade Fight Stick - TE 2.
I got it second hand pretty cheap and I think it's broken/dirty or something.
Most of the buttons don't spring back properly and sometimes.dont recognise input if you press them too quickly.
Might just be shit though.
I haven't used it again since I got it.

Because you can use more than your thumb. It's not faster though (some people will insist it's slower based on their lizard brain presumptions but it's not really), mostly just more comfortable. They can be more reliable for certain kinds of inputs because you don't need as tiny of movements but that depends on the joystick style and is why people have different preferences for different games.

sticks have an advantage in certain areas over pads. sticks have a lever so it will always take longer to input the same motion than a pad. srks on a pad will always be faster. on the other hand you can easily reach all 6 buttons on a stick so you can do shit like double tab, piano motions, negative edge, weird button presses like lp+lk+mp easier on a stick. the thing is, most of these "legacy" inputs only matter in old games. nowadays games have lenient input requirements or you can straight up use the ingame macro (used to be not allowed back when I played).

the only reason why I switched from pad to stick was that I am a fucking autist/purist and it felt like the right way to play fighting games. Longer gaming sessions (6-7hours+) also fucked up my thumb.

I decided against getting this because the RJ45 cables per console are about as expensive as buying adapters for most consoles.

Instead I built several sticks with a Brook Wireless boards and use 8bitdo or brook bluetooth adapters with consoles. You end up with a less annoying result as long as you're not some fgc tournament fag, and if you really need absolute minimum lag they work over wired too.

Either way make sure you get that 20 pin harness, it makes the install dead simple.

I don't have a mister but this was created for it but I use a knock off for windows. I bought it off Amazon with a bunch of cheap buttons and a stick. It works good. Just need to know how to solder. The Amazon one comes with come cheap quick connects and cables but you can desolder them, replace the buttons, etc. I bought it to make a prototype before building a real one and I never got around to upgrading because it werx.

At first I trained myself to play with the top row because that was closest to the original Neo Geo arcade layout and I wanted the true experience.
Turns out that is very hand on your hand over long periods.

The Hori Real Arcade Pro 2 works for both PS1 and PS2. It has a very comfortable curve for the buttons, superior for me to the currently accepted Vewlix layout. I would have preferred to get the Hori Real Arcade Pro 2 SE (Special Edition, not Special Addition) but the base 2 was cheap but does require button replacements to not slide around.

Earlier versions aren't grounded (or something) properly so static buildup will sometimes make either one or two trigger buttons or the entire stick shit out until it's unplugged, depending on your environment. By modern standards they're also laggy as shit but that just tells you how much 1 frame really matters that nobody ever complained when they were tournament standard. It's mostly a good case and parts though, although I don't like how I can bend the shit out of the case around the cable compartment.

Sega tends to be the worst about this, their in-house buttons (which suck) are like 29mm instead of Sanwa/Seimitsu standard 30mm.

I've modded a bunch of old sticks and honestly most are kind of a nightmare, the worst of all being the Neo Geo AES stick it's very tight inside. The Namco Playstation Stick in the OP is tight too because of the wedge shape but for the mod I did I kept the stock stick and buttons and just swapped the stock PCB for a Brook board, but that meant desoldering the buttons & destructive changes to the daughterboard under the Start/Select buttons. You might say that's a travesty but you can still get those sticks brand new for <$100 if you know where to look.

Other sticks I had to do rust mitigation / repainting and change out worn buttons like on the ASCII Famicom stick -- hard to call it fully reversible when I'm sanding the surface to get rid of rust. That's when I didn't drill new holes in the body to add a Home button like I did to a Virtua Stick that thankfully came with Seimitsu buttons and not Sega's junk.

The HORI Fighting Stick series at least uses proper 30mm buttons so you can swap those really easily but a lever swap is a lot more annoying. And yeah you'd have to either remove the stock PCB or resolder new buttons to it.

You really just have to accept that you're going to be changing vintage hardware that isn't being produced anymore. If you're not comfortable with that, then walk away. IMO if you own it and want to do something then who cares what anyone else thinks, the modded sticks I have are way more usable and fun than what I started with.
