There are only really 4 character types in the original Super Mario Kart. Mario and Luigi, Princess and Yoshi, Bowser and Kong jr., Koopa and Toad. This was done to make things fair for two players, since both players cant choose the same character.

Mario and Luigi are the "all-arounders" of the game. Average in every respect.

Princess and Yoshi have high acceleration and decent top speed, but shit cornering.

Toad and Troopa have tight cornering and decent acceleration , but the slowest top speed. Being lightweights, they also take more recoil from collisions.

Bowser and Jr have the slowest acceleration, but the highest top speed. Being the heavies, take less recoil from collisions.

Mario + Luigi = average acceleration, second fastest class behind DK jr. + Bowser, middle weight class
Princess + Yoshi = Fastest acceleration, slower than Mario + Luigi, lighter than Mario + Luigi (can be knocked around easier)
Bowser + DK jr. = Slowest acceleration, fastest top speed, heaviest class, hardest to corner with
Koopa + Toad = second fastest acceleration, slowest top speed, lightest class, best cornering. The best class to start with.

Wario wasn't yet a thing, once he was created Koopa Troopa got kicked out. As far as DK Jr., there are conflicting official responses as to w hy he was chosen. One because the shirt made him easier to identify and second it was the anniversary of DK Jr.
But in general Nintendo liked DK Jr. He made an appearance in Mario's Tennis on Virtual Boy instead of DK and when he seemed to have been completely replaced by Rare DK, he appeared again in the game & Watch gallery games and Mario Tennis 64 which is his last appearance. I personally think Jr. is better than most of Rares original characters do not copy. Outside Diddy/Cranky/Dixxie I don't really care about any of the others, perhaps Funky for how ridiculous he looks.

The franchise had a really limited roster at the time of SMK's release.

So they're basically stuck with Daisy, Tatanga, or a Koopaling. Tatanga was still a one-off character and his design isn't very striking. It looked like someone spent 30 seconds creating him. While Daisy made a small reappearance in a golf game, most players only recognize her and Tatanga from their tiny B&W GB sprites. A Koopaling would have made a great alternative to the Troopa but it might look like a heavy and they needed someone to match a small guy like Toad. I guess that's how they settled with such a bland driver character.

In retrospect, they could have given Daisy Peach's driving style and Yoshi Toad's style.

I kinda hate the physics of the original Mario Kart. The worst thing is how it perceives falling into holes. Go anywhere near the corner of the hole and you'll fall, even if logic would dictate that almost the entirety of your character is still firmly on the road. It makes a potentially fun track like Rainbow Road a fucking slog.

I think that was the original plan for Rare's Donkey Kong. I am pretty sure there are some pre-release remnants of Donkey Kong being refereed to as the son of Cranky Kong. But Miyamoto apparently hated the change, because it meant that they would discard his original DK jr. design for Rare's CG renders. So Donkey Kong was made Cranky's grandson instead. Cranky is/ was suppose to be the original DK.

I had Super Mario Kart back in the day. use to play the shit out of the game. Including knocking out some of the fastest times I could in the time trial mode. Two player battle mode was a constant thing I would play with my friends and siblings. From my own experience, everyone wanted to play as Koopa. Koopa was the most selected character in the original Super Mario Kart roster. It was a combination of Koopa just being really easy to control, and didn't look as lame as Toad. There would be fights over who got to be Koopa. Toad being the alternative to Koopa would be the constellation prize. The Koopa victory theme is permanently etched into my brain because I use to hear it so much playing Mario Kart.
