The stuff I have is mostly stuff I kept from back then when I raided clearance sections since I don't have much money. It's primarily a life simulator RPG. You need to take care of your basic needs, no matter which character you are (there's a fuckton to choose from, from Shinji to Misato to Gendo to Tohji to Penpen), you form relationships with other characters, battles are all about timing and placement.

The spin-off material this franchise has birthed is by far a "jack of all trades" (otherwise known as cash grab lol). The only material that you could claim to be a "fitting" portrayal of the OG series through a retro VG medium is buried under decades of lost media that never made it outside of Japan. I don't remember the titles, but your best bets are the N64-early Playstation eras (fighting and shooters) and maybe Super Robot Wars if you're willing to wade through that clusterfuck to find each game they're featured in

I didn't notice a strong similarity outside of the fact a lot of V Gundam happens in forest or mountain areas, similar to many of the landscapes of Evangelion, but iirc Anno did say V Gundam was his favorite, or at least he liked it a lot, and that was airing while Eva was in production, so yeah there's likely a lot of Victory influence in Eva.

Good question. The Mac version has red/pink background and green letters, the console ports have a totally different cover art, though the title is still stylized the same, PS1 has red letters (and rather bold, with shadows/outlines), and the Saturn version is black and red, with only the word "Girlfriend" being in red.
PS2 game has it in red, and PSP version has it in pink. Not sure if there's any other version, but regardless, I'm unable to identify that version that looks like the original PC version but with red letters.

There is a lot of Evangelion merchandise lately. If I had the money, I probably would have gotten the ASUS and MSI Evangelion motherboards. They were very beautiful and I loved seeing them in person, but these days they are scalped for their limited batch. Eva's last few episodes are a result of the studio running out of budget and having to salvage what they could by drawing shit on napkins.
Xenogear's second disc, where 98% of the plot happens, is the same kind of deal, and the game degenerates into a light novel with occasional snippets of gameplay for what should have been, like, 70 more hours of content.

In the first case that isn't true at all, and I'd imagine the same for the second, given how game development typically goes. The Eva team was never out of budget, what they ran out of was time. They were always at their limit in terms of having enough animators to get episodes done in time, and the director would frequently decide on the final script for an episode at the last possible moment. The original episode 24 previews had sketches of episode 25 containing content not actually shown until 25', and only sketches, because the animation wasn't complete. They had to switch to the simpler contents to get them done on time, but not because they didn't have enough money.
This is usually the case with game development as well - big goals are set, but the publisher wants to release by the holidays of year X no matter what, and as the deadline approaches certain features or story elements have to be cut. Even with a big game like Halo 2, it ended the way it did because they were still trying to finalize and tweak things down the very last minute, but Bungie was not in risk of collapsing financially or anything.

Oops, I thought they had more in there than just the snippets they kept in the final 25: Asuka in the lake, Misato comforting Shinji by the water, etc. Either way, they've stated that the contents of 25' were originally planned to be in 25, but they didn't have time to get so much content in there, so they made it an expansion of 26 (which was always planned to be the Instrumentality), and that's why there's such a hard jump between 24 and 25.
