What do you even mean by this? You literally can step around your opponent and do side and back throws. Or different holds on a lying opponent depending on your position around him. In Ehgreiz and Power Stone, you have full freedom of movement and the camera pulls up and back to account for this. It’s an arena you can freely move around in, and the characters do not snap to a plane or snap to face each other. You have total freedom of movement akin to a wrestling game.

The only difference is that it uses a standard fighting game lifebar instead of a stamina meter. Ehrgeiz would be perfect if not for some boneheaded mechanical decisions that make the game feel jankier than it needs to. Cloud and Sephiroth putting their swords away after falling is really dumb and Tifa's fireball is way too good.

the game has frcs like guilty gear where you can do secret special moves and extend combo strings based on strict timing.
standing normals can be parried with interrupt.
weapon attacks can be caught with a separate button, so weapon strings are mostly useless, even supers like omnislash.
there's directional dodging.
wall attacks.
its almost like a technical wrestling game meets smash.

It does not allow you to roam freely because your characters are always locking themselves to a line with the opponent. I mean Namco System 12 games specifically. Tekken 3 port looks excellent because polygonal backgrounds from the arcade version are not essential for the gameplay and overall look. In Ehrgeiz case, there is not much that you can cut from the game without affecting the gameplay, so Square decided to drop goruaud shading entirely which negatively affected the look of the game. At least they could prebake some shading into textures like what Sega did with Saturn VF2 port.
Namco themselves decided to not fuck with Soulcalibur and ported it to a more powerful hardware.

Ehrgeiz's 3D kinda-wrestling gameplay certainly helped provide a base, but there are some that exist (Street Fighter's World Tour and the Soul Calibur games are a more abstract case, the Tobal games were made by Dreamfactory like Ehrgeiz, the 2000s Mortal Kombat games etc)
These days, fighting games usually go straight to console, meaning no base to add on to (though this isn't always true). Between that, the focus on multiplayer and the rising production costs and single-player modes have generally been less priority.
