I hear Ultimate and Hardcore but objectively 4 looks the best which isn't retro

2 looks a bit different where as 3, Ultimate and 4 look pretty similar.
Ultimate is sorta improved version of 2 but not too different.
Ultimate has a lot of costumes. 3 has a low number of costumes.
As far as gameplay goes 3 > U > 2 > 4.

I said gameplay, there was a recent /vr/ thread about Dead or Alive, try to find it if you can, another anon explained it better.
4 is basically broken from a gameplay point of view. If you are guarding properly, you are still at a disadvantage.
As far as content goes, 3 has too little. That's the main thing if you ask me, as I play older fighting games for content, but 2-U-3-4 feels similar gameplay-wise, so that's another reason as well. I think 1/+ and 5/6 feel different.

Ultimate and 3 are the best, but unless you have the Booster Disc, 3 has far too little content. And even with it, it still falls a tad short and if you're an American it's still not quite the version Japan or Europe got.

But...I'd say owning both Ultimate and 3 are your best best. Ultimate includes the Booster Disc anyway and owning 3 unlocks Hitomi Ultimate.

Dead or Alive Ultimate was the reason I bought (well, it was a Christmas gift in 2004) an Xbox in the first place. The amount of content it had was awesome for a fighting game. Every character had a ton of outfits and the graphics were insane for the time

Generally for fighting games latest games are the best (don't listen to people that are butt hurt about some change), but 1/+, 2/U/3/4 and 5/6 sorta feels different as well. They have nice content looks very nice and so on, so there is a reason to play those. For DOA 6 they kinda messed it up at places so 5 is the best right now.
Only fighting game that comes to mind you might want to play older games is Street Fighter. A3, 3, 4, 5 all offer something different. Even then if you want to get serious, just play the latest version.

Tekken 7 is objectively the best from T5-T6-TTT2-T7 era because these are essentially the same game and the latest one is the most polished and balanced.
Tekken 2, Tekken 3 and Tekken 4 are all different from each other and newer Tekken games so you can't objectively compare them the same way you also can't compare SSF2T, 3rd Strike or SFV:CE because they are all very different and have different fanbases.

Also while I liked unlocking characters in the past, its a stupid mechanic.
When you want to play a fighting game with someone, and don't have the save for it, you can't even play the game. Its not like beating arcade mode with every character takes too long you need incentives. Ending videos are enough.
