It has good writing, the characters are pretty charming, and the combat is really cool. A shame everything moves at such a slow pace though. I played it on steam and used the cheat engine speed hack and it increased my enjoyment with the game by a substantial amount.

For sure. Despite this probably being my all-time favorite JRPG this is my biggest criticism of it.
Part of me thinks it's down to overall aesthetics and stylistic choices (the character designs are some of the weakest in the series as well, for example). I can understand the in-game graphics being dated, but they picked the most drab palettes for a good chunk of the dungeons and overworld fields.
Not to mention the move to CGI for the FMVs was a mistake for the series. Grandia 1 had a clean and stylistic anime for characters, whilst using CGI for monsters and backgrounds. Somehow it didn't clash and actually still holds up. Meanwhile the characters in Grandia 2's FMVs look like they were made from Play-Doh.
I know back then JRPGs were all attempting to make that leap to entirely 3D visuals, but in Grandia's case it feels like they were trying to fix something that wasn't broken.

I beat it and only recall there being a tough boss early on or near the middle. Literally don't recall anything else as I beat it one time and never played it again. I beat mgs twice and can somehow recall almost everything from that game.

The story is weirdly like a completed Berserk. The Eye of Valmar section seemed similar to the Lost Children/Misty Valley arc. Valmar itself seems like idea of evil, humanity chose evil God to give life meaning.
Grandia 1s message was you can achieve anything if you try hard enough. Grandia 2's is that humanity doesn't need Gods good or bad to exist. Both decent messages, themes.

Visuals and performance. The game literally has twice as much detail on Saturn than PS1. That's the big thing. I mean this in every sense, it can be measured. For example the battle backgrounds are half resolution on PS1. World geometry is missing shadows on PS1 (everything is shadowed on saturn), several effects are flat out removed like rolling waves in water. Some PlayStation things look comically bad like the floor graphics in all 3D areas, instead of having meticulously placed details they instead had to settle for large repeating polygon meshes which when zoomed out reveal all kinds of nastiness so things like the map screen feel way off and navigating up close shows there's no rhyme or reason for the design of the roads in towns that was there in the Saturn version. It's just a massive visual downgrade.
