Can you recommend me games I can play with a flight stick?
Sim or arcade flight games are both fine, space or mecha games that control well with are welcome too.

After Burner 2, it doesn't quite feel right playing it with a controller.

Damn, I just bought that stick HOTA combination a few weeks ago. It's the cheapest entry model in the "serious" joystick business.
Everything that involves dosbox emulation is hit and miss. Joystick emulation/passthrough is still buggy.

If you are even remotely interested in the genre Freespace 2 is the undisputed masterpiece. Get Freespace Open and play 1 and 2 back to back.
Other good space games are:
Wing Commander 3 to 5
X-Wing Alliance (play Tie Fighter with the remake in that engine)
Starlancer
For mech games:
MechWarrior 2 to 4
Heavy Gear 1 and 2
Starsiege
G-Nome

kek I forgot normal planes. There's a lot there, just some out the top of my head:
Light sims:
Jetfighter series
Jane's ATF et similia
Novalogic stuff: F-22 Lightening (2 and 3), Mig, F-16, Comanche
Real sims
Other Jane's stuff like F-15, F-18, AH-64
Falcon
Longbow
Apache and Hind (kind of in-between)
Enemy Engaged

I say only flight games / space combat sims.

for the mechwarrior series you're actually making to many small fine inputs for a joystick to feel efficient. joysticks are great for steadily pulling back on - like for turning an aircraft / spacecraft. what they are not good for is constantly making many small adjustments.
the only advantage a joystick offers to a mech game is weapon groups all being on the stick itself...otherwise they are utterly inferior to just using the mouse for torso, keyboard for legs.

I say this all because I used to play Mechwarrior 4 almost exclusively with a logitech wingman because i was stuck in this "durrr imma real mechwarrior" mindset then one day I switched back to the mouse like I had did with 3 and never looked back. another good example are the trad. 6DOF games (descent series) might seem like a perfect match for joystick control but there you're making even more small and large adjustments in literally all directions...unless you have like an actual like aircraft grade stick down at your right ala the F-16 for maximum comfort it starts to fucking suck.

that all said, get IL2:1946 and you could probably never have to buy another sim game in your entire life. it's one of those unironic 10/10 masterpieces.

Guys I'm looking for a game I played in my childhood on my stepdads PC.
Must've been released around 1999 +/- 2years at most.

It looks similar to F-22 Lightening 3 which >>9250798 mentioned, the release year kinda fits as well.
I only remember having trouble starting the jet at first on a level where you start from a aircraft carrier, does that game have such a level?

Any other games that released around that time and look like F-22 Lightning 3?

Hm Mig-29 also looks similar.

Performance-wise sure, but if you play to have fun pretending to pilot a giant robot in single player the joystick is much better.

Probably Jetfighter 3 or 4.

Crimson Skies is also an extremely enjoyable game.
I remember someone made a patch to run it on modern systems.

Digital Image Design made some very good flight sims back in the 90s, especially their EF2000 and F-22 series.
