On topic, I'm quite surprised with how this game is designed on the GBC. Normally sprites can only have 3 colors + transparency, but she has many colors herself. Other enemies, like those pirate guys, only have 3 colors, so they likely layered sprites together for more color. Considering how there's very few enemies on screen at a time, to possibly prevent flicker, this seems logical.

Also, how was the music for this made? Was it written entirely in assembly, or did they use some sort of tools? Or alternatively, Kaufman merely wrote the music and he handed the song to be programmed to someone else?

At least the GBC (and the original Game Boy) are a little faster, so they can handle some slightly inefficiently made music from a tracker. But on the NES, efficiency is an absolute must. Famitracker music, for example, cannot work on NES games due to how unoptimized they end up being. You're better off writing the music from scratch, which is especially annoying with the NES.

Despite being inferior, the NES has one key advantage over the Game Boy. It can playback digital samples, such as drums or basslines, reliably without tying up the CPU resources. The Game Boy can't really do that, and the Game Boy works in a weird way where channel 4 can either be noise (or static) or a digitized sample.
