Xbox in general has mostly better performance and better graphical features, but not all games take benefit from those and some games actually have better graphics on PS2 since they got more love on it
Look at San Andreas, PS2 looks graphically much better, even though you can manually mod the game to look the same on Xbox

I like playing from the official disc, it doesn't feel the same otherwise. It's like putting an official cartridge into a Super Nintendo vs an Everdrive — sure they're both technically the same, but it just doesn't feel right. I'd actually say most games that also released on PC around the same time. I'm playing Fable TLC right now and the fact that I can play it with real actual controls has made the game far more enjoyable than when I played it on Steam.
Also as a general rule, literally every console-only multiplat that got an Xbox release, because the Xbox version is always the best version to play.
Max Payne, the Spider-Man games, Dark Alliance, Crash Twinsanity, the list goes on. I grew up playing the PS2 versions of these games and I can comfortably say that this is not the console to be playing this shit.

I play it solely because I'm a car fag and FM1 has several cars that never made it into other Forzas.
I play it on 360.
Compared to FMs 2-4, I think the physics of the cars were not quite finished yet. It feels a bit... raw. Like, tuning is a bit unbalanced - if your Mazda makes it into the S class, you will never be able to break fast enough to be competitive against Ferraris and Saleens, even with top brakes, weight reduction, etc. Handling feels a bit off on several cars.
Some interesting things were not present in later Forzas, if I remember correctly. Like, only in FM1 you can kill your engine by revving it into the redline. Also, I believe only in FM1 if you scratch your car against the barrier, the barriers will actually have some paint from your ride left on'em. Nighttime tracks were also removed... until Horizon came out, I guess? My bet would be that's because devs did not want to spend extra time on night-specific lights textures and models. And it is very cool to take a spin through the night in Tokyo on Pontiac GTO.
Overall though, it's Forza. Everything you like about the series was in there with the very first entry, so might as well give it a try.

Yes, the xbox component cables are usually very cheaply made. They're cheap for HDRV cables, $30? Xbox2Wii adapters are like $25 I guess so you're about $55 in for good component video out of the box. And even at 480i it makes a difference.
