What are some more fun sunny tropical arcade racers? I used to love the whole gritty underground aesthetic but lately I've been really into the bright sunshine mood.

Burnout 2. Unfortunately you have to emulate it, but the GameCube version works well enough. Just set the R1/L1 to double as X/Y so that you can boost while shifting.

Seconded, HYDROOOO THUNDERRRR is an incredible arcade racer and is a blast on the Dreamcast. PS1 port is good too, but the Dreamcast port looks right.
