What are the best options for connecting GameCube/PS2/Xbox to HDMI? My old crappy flatscreen is giving out on me and I want to just use my PC monitor instead, but naturally my monitor doesn't have component input.

GameCube has a digital out port, and while adapters are a bit expensive, they work incredibly well.
Ps2 looks like shit not matter what you do, I like the Levelhike adapter, but temper your expectations for literally any solutions.
Xbox has good digital converters and can output 720p-1080i, and will look pretty fantastic. Once again I recommend the levelhike, but most should look good.

I use a a porta component to hdmi transcoder, it's the best.

Since I also have a few other old consoles (SFC, PCE, and PS1) I use the cheapest RetroTINK with my GameCube and PS2 over S-video. It only works with 480i but it honestly looks pretty good despite that.
I just use an Xbox One for my Xbox games so I can't really suggest anything for that one.

I can’t stress that ps2 will look bad even with the best adapters in the world. Be prepared.

VGA is component + sync. Many monitors will work with TV frequencies provided you have proper cable.
Check the specs of yours

hdmi only:
hyperkin makes a $30 nintendo hdmi adapter
people rightfully slam hyperkin for being chinese garbage, but some of their stuff is serviceable (turbografx controller, n64 controller, sega cd hdmi, etc)

latency is acceptable, especially considering the price.

next cheapest would be something like the retrotink 2x pro - i have this one but only recommend it for those with obsessive personality types.
i basically only use it for xbox and some 240p systems

another viable alternative (with arguably better ps2 support) would be something like the latest OSSC with interlacing support at 480

GBS-C or retrotink 5x ect also all exist but if you're only going to use it for one or two systems its kind of ridiculous to overspend
