According to this interview, Royal Raceway (known as Peach Circuit in Japan) is Shigeru Miyamoto's favorite racetrack in Mario Kart 64. Good taste. Mario, Luigi and Royal Raceway are the best tracks in the game. It's also why all 3 have the special ghost challenge. They're the circuits that are the most actual Go-karting in design, and where you can exploit the mini turbo the most.
This is also why I prefer MK64 to games like DKR and CTR, which are more "adventure racers".

IIRC, the manual says that Mario Raceway is the MK64 team's favorite track overall. That's probably why it's the focus of the attract mode, along with the fact that pressing the R Button on the title screen displays the best time recorded for that track in particular.

My favorite track is Toad's Turnpike. Great background music and atmosphere, a relatively simple course where much of the challenge comes from keeping an eye on the traffic throughout the race. It's also amusing to hear CPUs crashing behind you on the Extra version of the course.

Rainbow Road has to rank as one of the most nostalgia blind things I have ever seen with N64 games. They say the actual photo its based on has him standing on the back of a codemonkey while he violently cracks a whip down upon his skull. In the background of the photo stand Koichi Tsukamoto, then president of the Japanese ultranationalist group Nippon Kaigi, founder of the Japanese National Socialist Party Kazunari Yamada, Shigeru Miyamoto and then Yamaguchi-gumi Kumicho Yoshinori Watanabe. Though my favourites in the series are still Super Mario Kart & Super Circuit.

Least favourite games are probably DS and Wii, DS was just Double Dash tracks with one or two turns changed (Waluigi Pinball=Daisy Cruiser, Shroom Ridge=Mario Circuit, DK Pass=DK Mountain... there's others) and Wii's AI was horrendously programmed; DS had the same programming but at least they still had pretty poor pathfinding/rubberbanding similar to MKDD

Even though my favorite is mario kart wii, this is my second favorite. It's the exact opposite of Wii. While Wii is a chaos fest that makes for excellent multi player, 64 makes for a nice relaxing sunday afternoon driving through all the locations. It's not too difficult to get first (or second) place even in the harder difficulties, so it makes for a great game to just turn off your brain.

Honestly a lot of great tracks in this game, with most of them being memorable and fun. But the ones that fail to be memorable really end up missing the mark. I couldn't tell you the difference between the two snow levels if you held a gun to my head. And the longer levels, such as Rainbow Road and Wario Raceway don't give enough to look at or give enough variety to make them too fun.
