So how are you supposed to know which is the correct aspect ratio?

4:2 is what the arcade cabinet actually uses and has 1:1 PAR, while 4:3 is what looks more "natural" and what all the playthroughs on YouTube use.

That's usually what I go by and that's why I usually go with 1:1 PAR.

For example, this is 1:1 PAR which leaves some weird aspect ratio of 20:7 but leads to perfectly round circles. The FB Neo-provided aspect ratio is 8:3 (so two 4:3 side-by-side) with oblong circles. However, the aspect ratio for 1:1 PAR in MAME is 321:116

Many other shmups have 3:4 aspect ratio for 1:1 PAR but for some reason Espgaluda has 2:4 for 1:1 PAR.
