But kart racers have a certain mechanical depth not found in other racing games. Traditional racers don't have jumping usually, for example. So it's a real waste to write off the genre as being for kids

In CTR at least, hopping is really used as a jump you can use it on certain terrain to get up to higher platforms. A few custom courses in MKWii also use hopping for shortcuts, perhaps some official courses too in other games, like I think one of the ghost house levels
