Red bubbles don't just take your sword away temporarily. They take it away until you get hit by a blue bubble or use a potion or touch a fairy.

Hard to say. The Red ones are the strongest enemy in the game, but it's because they're turrets. They can't move once they appear and they're telegraphed. Their big strength is that they thrive when you're distracted by other more mobile threats.
Conversely, the blue ones are far meatier and mobile, and depending on the positioning can be non-stop beam spam until they shift locations.

This. I just replayed LoZ the other day and consistently got my ass handed to me in Levels 6 and 9 by the blue wizzrobes. The red ones have the stronger beam, but they're easier to fight (I make a point of taking them out first). The blues ones will fuck your shit up much worse and there's not much you can do besides swing your sword wildly around and hope they don't phase through you.
Blue darknuts are tough too but not nearly as bad, they just require patience. The big problem with them is they usually appear in rooms with a blocked off staircase taking up all the space or statues shooting beams at you. On their own, on paper, they're not so bad. They're actually fun to fuck with if you can lure 3 or 4 of them near a bomb at once.
