I think I have a good layout for modern gamepads. Just change the c-button movement to the face buttons, for me its much easier and my small brain doesn't get confused.

No because that way I don't have access to A and B to toggle between manual and auto (inb4 "lol auto is casual", auto is mostly for when you need to focus on dodging/parrying shit, but it does shit damage so you almost never want to use it otherwise).
The one N64 game that used the left-scheme and actually clicked for me was Bangai-O. At first I found the C-buttons great to shoot in all directions, but then I discovered how much better it is to play with the stick (which the devs recommend as the best way to play)

I can, it's just not very comfortable. But who knows, maybe some day it'll click too, I just don't see much of a difference between using the d-pad or the c-buttons. For bangai-O there's definitely a difference between stick and c-buttons for shooting.
