I keep seeing people say that Super Mario All Stars is worse than the original NES versions, in terms of gameplay. What changed to make it worse? As far as I can see, everything is just about the same when it comes to the game physics.

Not true for SMB1 and Lost Levels. The controls are stiffer than the NES originals and you don't bounce off bricks the same way. Not sure if Mario 2 or 3 have any significant differences.

Put it simply, some people (mostly romhackers) noticed that the physics on the blocks from SMB1 on All Stars (and by extension Lost Levels) are different from the original NES game, you go through a little bit more when you break a block instead of instantly bouncing off. It's not instantly noticeable unless you're basically a speedrunner of SMB1.
I remember there was a thread about this and searching online, the first time someone ever mentioned something about this change was in about 2002, and someone released a romhack fixing this to make it like the NES physics, around 2006 or so, but not many people seemed to care. It was many years later that people online started mentioning this fact more, it sort of became a "DID YOU KNOW" type of thing.
Other than that change, All Stars is pretty faithful to the originals, I don't recall gameplay differences in SMB2 or 3, and while some people might prefer the originals more, and that's fine, I think the remakes have their own material to stand on their own too. More backgrounds, effects, etc. But not overdone, just nice little details that enrich the visuals up for 16-bit standards, just enough.

SMB1 is underrated now simply because of how incredible SMB3 is. Yet when I think about what the single greatest pure platformer is I keep going back to the first game. I feel like short, linear games were abandoned for all the wrong reasons.
