He's so fast that he just becomes slow in practice. At some point, probably sooner rather than later, you're going to miss that jump, hit a wall or robot and lose your speed because you're not a super-sonic speed hedgehog, you're a fallible human being, and you'll do it again and again. There's less stopping in Mario so you get to feel fast more often despite having a lower top speed than with Sonic.

There's literally one spring in the entire classic series that this applies to, and it's the one in Marble Zone. There isn't a single other spring that poses an actual problem, and even with this one it's not likely it'll throw you into any actual danger if you keep holding right.

I’ve said it before and I’ll say it again: the Sonic series has always be stupid. It served one purpose: to show how fast superior Sega consoles could load things. But the core concept of going fast was flawed for fullscreen games. You literally couldnt see far enough for it to matter. You just had to memorize courses, so autists latched onto it. Mario, being slower, let actual normies enjoy it and needed much less memorization. So now Mario is a huge cultural icon and thus the amount of people speed running it is several orders of magnitude higher.
