In the leaked HL2 Beta you can actually load the early maps along with most cut enemies and see how they would have appeared in-game.

The HL1 Alpha has a lot of stuff in it that didn't make it into the final game as well. It was fun to mess around in. This alpha dates back to early 1997 if I remember right.

Tom Hall wanted Doom to be more story based. There was going to be a story of 4 marines going through realistic military buildings fighting demons. There was talk to have co-op over early internet as well, making it very Left 4 Dead like.

Would have been ahead of its time, but Doom remained ageless thanks to it taking a more arcade approach.
