What's the best fighting game, if I want to play alone? I don't just mean a good campaign, but the general overall one-player experience (please take the quality of the AI in consideration as well).

Try any PS2 Soul Calibur, Tekken 5 or Dragon Ball Budokai 3. They have good single-player content, you should also try any 3-D era MK game(Deadly Alliance, Deception, Armageddon)

I found the original Soul Calibur on Dreamcast to be my favourite for single player content. It had a really fun quest mode that has lots of really interesting challenges (standard fights, 2v1 endurance, poison weapons, wind blowing you around the stage, quicksand etc).

Other contenders would be Virtua Fighter 4 Evo's quest mode that had you travelling to 'arcades' to win items and climb the ranks, and some of the Mortal Kombat games like Deception or Deadly Alliance. They had wild single player modes, with Deception actually having an open world style map that you walked around and got into fights.

The Dream Factory games are hit or miss (Tobal, Ehrgeiz, The Bouncer) but they were made for single player with campaign modes.

Check out Red Earth. It's one of the few fighting games with a single player focus as it has a password function to save your progress and some RPG elements. The sprite work is fantastic as well.

Virtua Fighter 4 Evolution. It has one of the best and most comprehensive tutorial mode in fighting games even to this day. It covers overall fundamental concepts to the game and plenty of character specific stuff too. There's also a really awesome quest mode with a bunch of AIs, some even being modeled after top players that are extremely difficult. The AI variety is some of the best if not the best I've ever seen when it comes to single player fighting games, I got hundreds of hours out of this game way back when.

Looks like the one I thought I remembered being it was it but it's kind of "200" with an asterisk.
