Why? This used to be one of my favourite games but sometimes I feel like this too. In my case I'm at a point where I'm better than the CPU but worse than professional players, so normal playthroughs feel a little bit boring. I still think it's a great game, but I wish it was more challenging.

Well yeah, if you wanted single player racing games you went to Diddy Kong Racing, not Mario Kart 64.
That being said, I'm not a multiplayer guy, and I like this one a lot more than the Mario Kart games that came after it. Switch and 3DS games are pretty nice tho.

It came out 3 years later with the aim of copying everything and doing it better, at a time when 3D games had been rapidly evolving, and it did. It's super dishonest to just compare them outright. CTR is a hugely better game but MK64 is quite literally its predecessor, it's like comparing an early technology demonstration to its completed product without even acknowledging that one led to the other.

That's where you're wrong. Some of the best video games of all time have incredibly weak single player modes. Nether Realm focus on single player modes with their fighting games and they overall suffer being clunky messes compared to Capcom and SNK masterpieces.

I don't know what you're talking about, I've played several SNK fighting games and for the most part I play them alone and I enjoy them a lot. It's true that they're twice as fun on multiplayer but that doesn't mean that the arcade mode should be half-assed and left behind, a game that has a good single player mode and a good multiplayer will always be better than a game that has a bad single player mode.

I mean, I used to absolutely love Sonic Adventure 1 as a kid. I still like it, but it's nowhere near as good as I remember it. Sonic Adventure 2, on the other hand, I feel actually aged better than Adventure 1 did, at least gameplay-wise

Actually, yes. I like playing against bots, specially if they're not badly programmed. But the problem with MK64 is that, not only the single player content is very barebones, but it's also not really enjoyable (at least GP mode) enemy AI is really bad, you can't choose your courses freely, there are no unlockables besides mirror mode, etc.
