For sheer accuracy and quality of options and content, then it's the new official console ports on Switch, PS4, and XBone. The one thing they lack is the option to rebind your controls, but beyond that they have all the monsters and levels, all the music, all the expansions (as well as numerous curated level sets of high quality, for free, and they're still adding more).
If you don't have a computer but have one of the previously mentioned consoles, it's a very good way to play Doom. Just make sure vertical sync is turned off.

Otherwise, the Playstation releases. They have their own drawbacks, but they offer new exclusive content as well (exclusive at the time, anyway).

Sewers and Betray are garbage although I love them as a novelty. Xbox Doom is unplayable in singleplayer because holding left trigger (run) and pressing any face button (ABXY) will activate a cheat against your will by accident very often (running and trying to open a door or switch weapons etc), so you'll constantly become invincible with a cyberdemon scream sound playing alongside every cheat input. Xbox Doom is legendary for couch multiplayer since if has Doom 1, 2 and Master Levels which makes for great coop and deathmatch, just don't play it in SP.
There's also the bug where Phobos's sky displays in e2, e3 and e4.

In fact there are no clear hard lines for sampling (.midi renditions aren't technically the same as sampling, but whatever), M.C Hammer was sued by Rick James for Can't Touch This making heavy use of samples from Superfreak, James won that lawsuit and was owed royalties.
