This. I like the game's aesthetics and it's fairly enjoyable to go through, especially when I want to play classicvania with my PS3 set up, but when I actually get to thinking about what I like about its gameplay, the only thing that comes to mind is the clock tower level. That's probably the only one where they do anything fun or interesting with the concept. Shit like level 2's green globs and raft ride either go nowhere and don't even need to exist or are less challenging and more just obnoxious sections for the game to take a cheap hit at you with. That includes stuff like

>skeletons et all taking advantage of your big size and slow gait
>sections being hard just because it's your first playthrough and you don't know how things work in this game compared to others and what's the best way through a section
>the best solution most of the time being using the axe, which the developers seemingly knew and why they were very stingy with it

I still enjoy it, but it all becomes incredibly easy once you see through its bullshit.

That used to be more or less how I felt about it too, and while I enjoy way more now than I did the first time I played, I still don't really disagree with you. I remember reading an interview with the developers who apparently thought really highly of the CV 1 and wanted to take the best elements of that one while appealing to what they thought were a hardcore PC crowd. I laud them for their tastes and think they have a grasp on what makes for a good CV game, but I think what they put out misses the point of what made 1 so good and loved. Namely, 1 was tough, but it was fair about it, probably moreso than any of the games that came out after it. It even had gamebreaking shit like holy water, so it wasn't just hurr durr hard = good bullshit. Chron/X68 I think really eschews that, and when you adjust to it, you end up with a pretty but somewhat vapid game. Without the aforementioned added enemies of later runs, it's really not that interesting for me, personally.

Imo, Stage 5 (the Clock Tower) was actually a pain because the gears blend perfectly into the background, and the PSX port messed up the screen ratio and HUD so part of your vision is obscured. As such, you end up getting hit with a ton of pot shots before the cocaine werewolf throws chunks of the building at you.

X68000/Chronicles is definitely hard, but I feel like it's easier to get used to it and find a rhythm. In contrast, while I like Castlevania III a lot, the U.S. version almost always ends up irking me.

Possibly. The game has a vibe similar to Rockman Complete Works though. And the title is reminiscent of Squaresoft's collection of Final Fantasy re-releases. Seems weird they'd just plan the X68000 game and no others.
