I'm pretty sure there are good examples of gouraud shading on models of that gen. It's just that flat polygons are the more aesthetic ones, imho. At least when talking about fighting games:

Tobal n 1 > Tobal N 2
Virtua Fighter 2 Arcade > VF 2 Saturn
