....about underwater levels? Are they always a no-no or can they be done well, and if so what are some examples.

if they have basically the same physics as regular levels, that's fine. But when you get into "time limit or you drown," "you can't attack while underwater," "enemies are three times as fast as you while underwater," or "underwater is where we decided to place our surplus spike pits," then it becomes an issue.

I don't even know why, but i remember the shark from Banjoo Kazooie in the beach level scared the fuck out of me.

Same, I think OoT's Water Temple is my favorite dungeon from the game. I also like MM's water dungeon, but I'll admit that that one gets a little tedious.
