What is even the point of Knuckles? They made him as his edgy rival of similar capability, but Sonic already had an edgier rival of even more similar ability to himself, one who was antagonistic to the core and literally made by the enemy in Metal Sonic. There were even 3 renditions of metallic-sonics just in the Genesis series.

So he was outclassed to begin with, and then they made him something moderately close to that again in Sonic Adventure but mostly just another pal from then on out, and then made ANOTHER redundant rival in Sonic Adventure 2 who was even edgier and even more similar in ability to Sonic, and then ALSO made him into another of Sonic's pals.

Was Knuckles the product of a designer who worked briefly for them and fucking jumped ship?

Fundamentally this. Tails was created for Sonic 2, and it made sense that Sonic Team in the 90s needed to make things fresh and jump the shark and introduce another character.

Regardless I still like Knuckles (early Knuckles anyway) because Sonic 3 introduced him seemingly as a bad guy when you first play it and turns out he's just an idiot who fell for Robotnik. And in S&K he's seemingly more chill-minded than Sonic's speed-ahead attitude. Shame that further iterations stuck him with this idiot-/autistically-obsessed-mentality of brawn, but no brains, and only destined to guard the Master Emerald.
