Sure it had a lot of garbage like Make-My-Video but it also had games like Lunar, Earthworm Jim SE and Road Avenger.
Does the N64 Memory Expansion Pak play Road Avenger? No? Then it's worse.
Also like half the games that made use of the N64 memory pak did indeed run at higher resolutions but also at framerates that were somehow even slower than normal for the system.

as far as unlicensed addons, the Sega Saturn and Playstation ones that let you play region locked games.
For official addons there is no question that the PC Engine CD is the all time greatest, you got an absolutely massive extension to the library and to the general power of the system.

I wanted to know how people came up with the codes you'd enter, though it was partly obvious with RPGs, because you would enter most of a code and just change the last two digits, etc for the specific item you wanted

they are oversensitive still, so it sucks for any shooters, but for platformers its good enough. steelsticks is the "perfect" option but good luck getting one of those as the guy makes them manually one by one and they always sell out instantly. raphnet-tech has gamecube to n64 controller adapter which works really well and you can remap the buttons any way you like, but the problem is the mismatch of both controllers button layouts, and the GC analog triggers dont work too well as shoulder buttons unless you take the springs out of GC controller(at least in my option). raphnet-tech also has wii classic controller (pro) to n64 controller adapter, which works much better in my option, the button layout works much better for most games.

Why didn't they make N64 games that ran in the same resolution with better textures using the expansion pak instead of upping the resolution to ensure that they were unplayable?
As is, it is real garbage, especially compared to the Saturn RAM cart, which actually improved tons of games.

Saturn RAM pack let them fit animation frames in memory, giving you arcade smooth animation. N64 expansion pak doesn't do anything like that. It ups texture resolution, but almost always also ups resolution, which it doesn't actually help the system run properly.

PC Engine CD basically replaced the original hu-card medium in terms of major releases. Only time I can think of something like that happening.

Cool thing was you could generate your own codes with it to manipulate RAM. It had tools to detect value changes. Got 5 lives? Search for fives. You could then check those memory locations when you had 4 lives, 6 lives, whittling down until you had a few candidates.
