How do I not suck at this game and its sequels? Each section has me dying multiple times. I'm thinking of watching some spy movies to pick up the facts.

Learn from your mistakes and approach the encounters differently. Learn the game mechanics.
MGS 1, 2, and 3 have some infuriating sections relating to requiring first person aiming against bosses in a game where it takes quite a bit of time to lead into your shots and giving you tiny windows.
But they aren't hard at all and even with the infuriating bosses, you shouldn't take more than a few attempts.

Does it matter? It's not like death punishes you. You just continue and get set back a bit. I'm not great at MGS and died a ton on my first playthrough like a week ago so just figure it out and develop a strategy to sneak around the guards.

I can help you with that one because I just replayed the game. In phase 2, immediately run behind him and keep moving behind him until he just stops and stands still. Then you get a free shot on his head. Repeat the process until he dies. He won't step on you unless he does the animation where he stops and raises his foot in a giant tell.

Also MGS is a very easy game. Only problem I had was the repelling section with the chopper shooting at you because the controls are complete shit. But it's so short I would just tank damage and race to the bottom.

Legitimate question. If you're dying, that means the guards are finding you, so the question is what errors are you making when you choose a spot to hide or when observing enemy patterns.

The AI is dumb as hell. You can walk right behind them and they won't notice. Just stay out of their line of sight and you can run all over the map. Once you see how badly its programed it's laughable.

This. My perfect ideal for a first playthrough, if i hadn't already completed them, would be to complete the VR missions and Special Missions disc first, to be absolutely fluent in the controls and AI manipulation, then approach the full game without continues, just saves. Maybe even only the game recommended saves if you want to be extreme. And then do the same for MGS2. The MGS games always had good depth in this regard.

Once you learn how to run and shoot at the same time you can literally just chase Ocelot in a circle and never get it. Ready your gun with Square then hold X at the same time and start moving. As long as you dont let go of X you'll keep moving.

It's ironic how 4 and especially 5 have such great controls but no endless missions for post-completion. A map/mission creator would have been great. 5 is still the ultimate stealth sandbox thanks to the controls and free-roaming.
