How much of a sadist do you have to be to properly enjoy this game

Nah, that's one of the best and most playable Castlevanias ever. Maybe you meant this one...

No? OoE is a little bit harder than DoS, but neither is all that difficult. DoS gets more challenging on Hard Mode, especially if you start out fresh that way, rather than New Game+, but it's not really that sadistic of a game.

How am I supposed to beat the game with one potion

They both are easy, with OoE being the easiest game in the series and having a level design that is too simple for a Metroidvania.
DoS is good though.

The combat and uncovering of map area is easy in all the DS games. They're certainly easier than the NES titles. It's the collecting of everything that gets up my nose. I suppose all of them could do with more save points, as backtracking can become tiresome.

DoS is hard like a Castlevania should be but not excessively so. PoR was more uneven from my recollection, navigating the game was frustrating at times. OoE, I'm still on the first boss because it's hard as fuck already and I haven't summoned the effort to make a real run at the game yet

Indeed.

I honestly don't remember Dawn of Sorrow being THAT difficult, though I have been known to have selective memory.

The hardest part I remember about it was doing the seals on the touchscreen to finish off a boss. You had to do it perfect or else it would fail and you'd have to fight the boss some more.

Nintendo foisting the touch screen gimmick onto games. There's a romhack you can get which removes them, and I think it's worth doing, because it improves the flow of the game a lot. There's also a hack you can get for unlocking Hard Mode from the get go, so you can start from there fresh, and I think that's worth doing.

The Luck stat is also technically broken in DoS, which you can get a hack for fixing too, but if that makes the game too easy for you, maybe don't. It does reduce a lot of the tedious grinding parts though.
