what are some games that are absolutely terrible in the beginning, but after you play them a for a few hours they become incredibly good?

Umihara Kawase. It's terrible in the beginning when you don't know how to do anything and have to fight the shitty field 8 boss, but once you learn the game, it's amazing.

Remote Control Dandy SF, for the PS2.
It's a game where you control a giant robot via remote control. The tutorial is 40 minutes long and there's no way to skip it - you'll get bored halfway through it.
The rest of the game is awesome.

Wind Waker is too slow until you get the warp song (and swift sail in HD) but then it becomes pretty fun to explore the world

Monster Hunter PS2 was unironically like this for me. The control scheme takes some real getting used to and I remember in the beginning I could barely hit a velociprey or kelbi let alone fight the real monsters. But as I learned it better the system quickly became one of my favorites of all time and MH one of my favorite games of all time. I maxed the clock at 999 hours long long before I was done playing it.

Most fighting games are likely a little like that for beginners as well. Also roguelikes, your first few stabs at Nethack can feel brutal.

The random nature of it is a key feature of it's design and what makes it so replayable. If you think it's a random slot machine in terms of being able to win, the current record is a 30+ game win streak and Darren only lost due to a stupid mistake in that he has lamented greatly.
