Why won't they make another Persona game with an all adult cast? It would open a lot of doors as far as subject matter they could cover.

They struck gold with p3 and will probably never take significant risk anymore, but aging the previous cast was a very novel idea. The series gets less and less edgy with each iteration too, like going from buying guns off the black market to playing with toys to prevent the main cast from ever actually breaking the law.

Except they literally already had a persona with an adult cast, so its not a farfetched request. They could do so much more with the formula without the constraints of being set in a high school.

Because Persona games are set in high school- that's sort of what defines them from the very first game.
Eternal Punishment was a successor entry to Innocent Sin so they aged the characters up a bit.
If you want the Persona cast to be older, then really the only route they can go with is by aging up previous characters.
Otherwise you have Catherine which is like a Persona spin-off anyway and stars 30-year-old boomers.
