you need to realize there was a time before league and player association licensing. there was a time where there wasn't even a way to designate seperate players in a game. some games wouldn't even benefit from that. before there was a standard of what was expected from a sports game. Ice Hockey is one of the best hockey games ever made, you only have 4 players + a goalie, your player options are average guy, fat guy and skinny guy. It was fun the way it was, worked like how you'd expect hockey to work. Blades of Steel came a long later and improved on the gameplay. Or look at NBA Jam, 4 players total, 6 short of a real basketball game. Everyone was playing 2 on 2, 3 on 3 or whatever. Put it in a game. The game was fun, your team didn't matter much. I don't see how throwing Steph, LeBitch, Russ, whoever in there would make it more enjoyable.

Old sports games were cool because there was a focus on mechanics and AI, not flash and immersion. Up until the mid to late 90s having real players in your team was an abstract idea in a way, you didn't need something relatable to make a good game. Madden, 2K, Fifa, are all stagnant. Their primary concern is micro transactions. Buggy games, stripped features, despite labeling themselves as sims they only present any challenge based on scripted moments or essentially what is essentially a dice roll(against your favor) that determines if what you did was successful or not as soon as you do it. The focus is on multiplayer and convincing you to pay extra money just so you can build a team that is competitive against other people who have done the same thing. Football will always be my love and Madden is trash now, it's been a decade and you can still cheese any AI with crossing routes assuming your linesman doesn't fail a dice roll and gets ran over.
