Fuck this shit, is just a battery thing or this things could get fucked up in other ways? Like EEPROM?
Do you really have to use a specific type of battery? (For example 2032 battery). I'm using a ED64 Plus Enhanced, could it be the N64 flashcart?

It’s highly likely that it was a bad soldering job, de-solder and try again, make sure battery is 100% lined up correctly with positive and negative, and also make sure to not use Chinese batteries, only name brand.

No, the EEPROM (if that's what it's using, would be wried, EEPROMS are erasable and cost more, they usually stick with EPROMS, the non-erasable cheaper kind) should outlive you by a long stretch unless you peel back the UV cover (UV light erases the contents of the chip, so there's a sticker looking thing over that, if you take off the sticker you done proper fucked yourself)

In my experience, third party memory paks are not reliable at all. I had one of those 4 in 1 ones, and it just stopped working altogether, lost the save data prior to that and couldn't save.
Got an official one and so far (like almost 15 years now) it still works fine.

First party N64 games generally save on the cartridge itself. Some N64 games had optional data that could be saved to the controller pak, like ghosts in Mario Kart 64. Tons of third party games saved to controller pak exclusively though. Controller paks require a battery in order for the save files to persist after shutting off the console, and about a dozen games that save to the cartridge also require a battery. However, Stadium 2 is not among these so your old save should be safe.

Try replacing the battery again, maybe the first battery was a dud, or you messed something up in the replacement process. Make sure the battery is from a reliable brand.
If you have an Everdrive 64 one trick you can use to keep your save file despite not having a functional battery in your controller pak is to reset the console to return to the Everdrive menu and back up the controller pak to the SD card every time when you are done playing, and then restore the backup to your controller pak every time you want to continue your game. It's a bit of a bother but it should work, since the controller pak will be powered by the console itself while it is running. This works on a legitimate Everdrive 64, I don't know if the ED64 Plus Enhanced's functionality is identical since it's a clone, but if it has a feature to backup your controller pak I don't see why it wouldn't work.
All that said the simpler solution in the long run is doing what >>6741004 suggests, as it will ensure your controller pak won't lose its saves in the first place for the foreseeable future and you never have to worry about accidentally forgetting or messing up the controller pak backup process with the Everdrive.
