Recently I have decided to finish all retro Castlevania. I started with NES, then SNES and now I'm doing the Game Boy games. I really hated Dracula X(even if we ignore Rondo of Blood) mostly because I always saw it as a downgrade to Castlevania IV. But then I played Castlevania: The Adventure(just now got to stage 4) and holy fucking shit this is the worst Castlevania I have ever played. Not only the character is slow, there are way too many precise timing jumps (stage 3 is full of this shit, those spikes coming to kill you made me suffer way to much) and jump + attacking means you are going to miss 9 out of 10 attacks. I do not hate Dracula x anymore, it's a great game compared to the shit that is Castlevania the adventure.

I was about to give up. The only reason I didn't is because I read that there was only 4 stages, so might as well suffer and finish it. Glad to know the second game is great.

I've only emulated the original x68k version so I can't speak to chronicles, but I think it looks the best of the 16 bit CVs, I vastly prefer the four direction whip to 4's 8-direction limp noodle especially when it comes to the annoying enemies you need in order for upward whipping to have any point, I love the map designs for their verticality, particularly when compared to the obnoxious verticality of, say, Bloodlines, I dig the music, and the jumping feels the best to me compared to any CV before SotN (excluding Maria mode in Rondo). The difficulty is right about perfect for me, too: never feels cheap the way 1 and 3 often did, but not a cakewalk like the Metroidvanias. My only big complaint is that you can't jump off stairs.

X68K has some difficult platforming sections but you also have a lot more health than in other 16-bit Castlevania games. Or enemies do less damage, which ever way you want to look at it. They also move more predictably. Most of the hard platforming sections are places where you fall down and lose time, not die. Would be a pretty easy game if the levels didn't have time limits.

I have a baseline interesting in replaying everything 4 and above. Only reason I'm not too sweet on 4 is because I just prefer the simplicity of your main attack in the others.
Haven't touched Adventure or Revenge, but I did play ReBirth and enjoyed it a lot for what it is, would probably slot it in above 4.
Similarly haven't touched any of the Castlevania 1 alternate versions/remakes, let me know if they're any good/provide a unique experience.

While I agree that IV was made easier, I think it really picks up in difficulty on the last handful of levels, especially the cellar and the A and B stages.
Rondo and Bloodlines are similarly on the easier side with only a few moments of challenge.
I still don't think this makes the game worse than the NES offerings. After replaying the games so much, I actually find IV harder than CV1, the original game becomes a breeze when you know it inside out. IV still has some more tricky stuff, even with the multi whip.
Dracula X and X68000 are the ones that felt more like CVIII in difficulty, but that doesn't necessarily mean they're better than Rondo, IV or Bloodlines.
