I'm putting together a list of games for the NES, SNES, and some other systems like the Sega Master System and Atari consoles. What games can I not do without and what are some hidden gems?

Storage is so cheap these days you should really consider looking for complete US sets of cartridge based consoles instead of individually looking for games if you're going to emulate

Someone should make a 2600 chart, if there isn't one already. I've seen this list posted before:

Adventure
Atlantis
Battlezone
Berzerk
Centipede
Chopper Command
Cosmic Ark
Defender
Dig Dug
Frogger
H.E.R.O.
Kangaroo
Keystone Kapers
Laser Blast
Megamania
Missile Command
Montezuma’s Revenge
Moon Patrol
Pacman (8k romhack)
Pitfall
Pitfall 2
Qbert
River Raid
Seaquest
Secret Quest
Solaris
Space Jockey
Stargate
Starmaster
Yars' Revenge

I played NES, SNES, and 2600 as a kid when they were all new, and these lists of "/vr/-approved" games all irritate me. I never agree with them. They all kinda suck. But they still can be relied on to have a lot of good solid basic choices in them. So yeah just use those OP, but also keep searching if you're interested because there's probably always going to be more good stuff whatever guide you're using is missing. The supply of these games is finite but it's still large enough that a lot of real gems can indeed remain hidden.

The catch is that you can't just be told which ones they are, because the person telling you won't know your exact tastes. You have to find at least some of them yourself.

this is going to sound totally off the wall, but how about people actually describe a game and explain WHY it's recommended, instead of just vomiting up a massive list of titles and running away?

How many reviews do you expect people write here?
Just play the fucking games and see for yourself, it's not like you have to spend $60 to find out it sucks
Anons have shared a lot of links with real reviews of recommended retro games in this thread already

Guardian Legend is a hidden gem beyond /vr/ with a mix of action RPG, zelda-like item progression, and some pretty fun shmup stuff. I normally don't even like shmups. Also some pretty great music. I only played a little bit of it because I can't stand isometric perspective games, but Solstice has fucking staggeringly good music. There, two games with reasons.
