demos can be interesting in and of themselves, they're often a pre-release build of the game, so there can be differences between them and the release versions, plus things can be shuffled around just to suit a demonstration (not all games can be easily cut down to say, 10 minutes or a level)

My parents used to get my the Playstation Magazine every month so I had piles of disks. I remember I had a PS1 and it switched to PS2 so when i finally upgraded I spend weeks playing/watching everything on those disks and making a list of games I wanted.

God life was so much simpler back then.

A lot of disks (especially the PSM ones) had cool developer interviews/cheat codes/walkthroughs/downloadable save files which are fun to play with.
